Gamberi Marinati allo Spiedo – Shrimp Skewers with Tequila and Lime

Summer at times is tricky! It’s the perfect time of the year to entertain, throw parties, hang by the pool… relax. At the same time you do not want to find yourself slaving at the stove or at the grill while the rest of your gang is happily splashing and cheering; you too deserve some free time to enjoy a cocktail while (gain) trying to sit down and finish that book you like so much but it is taking you a year to read.

This recipe is perfect for summer fun, it is seasonal and easy to prepare, it is delicious and will please guests of any age.

Serves: 4-6 / Prep Time: 10 min / Inactive Time: 90 min / Cook Time: 2-6 min

  • 2 lbs Shrimps (17/21), cleaned and deveined, heads on
  • 2 Limes
  • 1 tbsp freshly chopped Cilantro
  • ½ tsp Hot Pepper Flakes
  • ½ cup Tequila
  • Salt and Pepper
  • 10-12 skewers

1In a bowl mix all ingredients, cover with plastic wrap and let marinate for 90 minutes, stirring the shrimps every 20-30 minutes.

2Place 5 shrimps on each skewer and grill on BBQ about 2-3 minutes each side, remove and place on a platter to cool off.

3Serve lightly warm or at room temp. Don’t forget some real chilled bubbles or since you have it, a few shots of Tequila!

4Note: this recipe makes great shrimps for a salad. Try them with some arugula, corn, diced tomatoes, avocado and a touch of cilantro.
